Happy Easter!

I hope you don’t indulge in too many chocolate bunnies and eggs this weekend.

It’s no secret that I have a sweet tooth, and unfortunately Easter is usually a time where there is lots of candy and chocolate in the homes of family that we visit. (A definite temptation for me.) This year I made sure to call the grandparent to make sure they won’t be doing an Easter egg hunt with candy filled eggs, because the last thing we need in our home is a 3 year old nagging us for candy. Luckily if it’s out of sight it’s out of mind after about 2 or 3 days, and then it’s safe for me to throw out!

Over the last couple of years I’ve weaned myself off of the milk chocolate treats that made me need to guzzle a litre of water just to get the sickly sweet taste out of my mouth. My taste buds have evolved to I now enjoy REAL chocolate. You know the stuff – the dark and satisfying chocolate that is 70% or more cacao.

Today I have an Easter treat that you can whip up in less than 5 minutes and indulge when you’re tempted with the less-than-healthy-Easter sweets chock full of white sugar and a whole other bunch of nasty ingredients you don’t need or want.

This rich and satisfying coconut mint chocolate truffle is made with real food, so you can feel good about eating it. It’s filled with good for you fats, fibre and magnesium so it won’t leave you with a sugar high or crash after eating it, and it’s rich enough that just one will satisfy! Plus you can make them in under 5 minutes!

 

Makes 6 truffle balls

Ingredients:

1/3 cup cacao powder

2/3 cup flaked coconut (I used very finely shredded coconut flakes, if you’re using the larger flakes you will probably need less)

¼ cup melted coconut oil

2.5 Tbsp pure maple syrup

1tsp peppermint extract

pinch of Himalayan salt

**you could probably omit the mint extract if you don’t like mint. I also used almond extract which tasted yummy!

 

Directions;

1.Mix cacao powder, salt, maple syrup in a bowl.

2.Add melted coconut oil and mint extract and stir

3.Finally add coconut flakes

4.Form into 1 inch balls

5.Store in the fridge to harden.

6.Enjoy

 

This truffles are a good source of:

-fibre to keep your feeling fuller longer, and to keep you regular

-Magnesium to help build strong bones and teeth, regulate blood sugar levels, and helps reducing leg cramps during pregnancy.

-Iron to maintain energy levels, and to prevent anemia

– healthy fat (from coconut oil) which is vital for baby’s brain development and organ and tissue growth, and helps with milk production for mom.
