You know when you’ve just made a great dinner, that your whole family loves. And your hubby says “Babe, don’t change anything about this recipe. Make it again EXACTLY like this”

 

And then you have all intentions to save that recipe?

 

You either decide to print it and file it in your huge recipe binder (yes I’m old school like that and I have like 5 of these binders)

 

Or it’s open on your mobile browser and you have all intentions to save that recipe wherever you save important web links. Maybe you save it directly to your phone, or you use the Pocket or Evernote apps.

(My fav for the record is Evernote. I love love love it. You can tag each recipe with however many tags you desire and make notes like “hubby’s favourite dish, do not delete” )

 

Well today’s recipe is mostly for me and my friends who keep asking me for this recipe, and YOU of course!!!  I finally decided it’s time to put it out there formally instead of reciting it from memory or my notepad in my iphone.

 

This salad recipe will change the way you look at kale. I promise you.

My dad isn’t really a salad guy and every time he eats it, he tells me how much he enjoys it. (my dad never enjoys salad!) & My hubby loves it too! And that’s MUY IMPORTANTE in my house!!!

 

All my friends keep asking for the recipe and it’s become a favourite at dinner parties.

 

I love this salad because you just need to know the very basics:

  1. how to make kale palatable (ie: not so dang rough and fiberous ) and
  2.  how to make the dressing.
  3. Everything else is up to you!

Because it’s very important that you get the kale into bite sized pieces, I’ve put the recipe into a video.

Super Crunch Kale Salad

Ingredients

  • 1 or more bunches of kale
  • For The Dressing
  • 1/4 cup tahini (sesame seed paste)
  • 1/4 extra virgin olive oil
  • lemon juice from 1/2 a lemon
  • 2 Tbsp maple syrup
  • 2 Tbsp coconut aminos, or tamari, or soy sauce
  • 1 clove garlic (optional)
  • For the Crunchy Toppings
  • Sesame seeds
  • Pumpkin seeds
  • Chia seeds
  • Hemp hearts
  • Dried cranberries

Instructions

  1. With one hand holding each kale stem, use the other hand to strip the kale leaf off the hard stem
  2. Massage and break kale leaves into small bit sized pieces
  3. Set aside.
  4. Mix all dressing ingredients together.
  5. Dress with dressing and mix thoroughly. Add crunchy toppings as desired
