Hey mamas, can you feel it?

Summer is almost here?

My in laws have been bringing over a lot of fruit to our house lately, and we just can’t eat through all the bananas that we have sitting in the counter fast enough. So before they get too ripe, I’m putting them to good use making the next best thing since banana bread:

These babies are almost too easy.

I kinda felt a little silly posting it up on the blog.

But since I fancied them up a bit, a-la last minute dessert when guests come over, I decided they were just too pretty not to include on the blog!

As with some of my other recipes, let this recipe be your guide.  Use your imagination for some fun and tasty toppings.

My fav is chocolate dipped, with peanut butter drizzle.

And my second fav, is peanut butter dipped with chocolate drizzle!

These popsicles are:

sweet
tasty
chocolatey
a source of protein (if using peanut butter)
contain healthy fats (if using coconut butter or peanut butter)
contain relaxation inducing magnesium (if using homemade chocolate or cacao nibs)

So go buy some bananas and let the summer popsicles begin!!!

The Easiest Popsicles You’ll Ever Make!

Ingredients

  • Bananas cut in half
  • For the Homemade Chocolate Drizzle/Dip
  • • 1/4 cup melted coconut oil
  • • 3 heaping Tbsp raw cacao powder
  • • 2-3 Tbsp maple syrup
  • • pinch himalayan salt
  • For the Coconut Butter drizzle
  • • 1/4 softened coconut butter
  • For the Peanut Butter Drizzle/Dip
  • • all natural peanut butter at room temperature stirred well
  • For the toppings
  • • cacao nibs
  • • toasted coconut flakes
  • • crushed peanuts
  • • any other yummy toppings you can think of

Instructions

  1. Line a baking sheet with parchment paper
  2. Cut a few ripe bananas in half
  3. Stick a popsicle stick into each of the cut halves
  4. place on a the baking sheet and freeze until frozen
  5. Meanwhile
  6. Make the chocolate dip/drizzle ingredients together (but only make this 5 minutes before you take the bananas out of the freezer)
  7. Soften your coconut butter by placing the jar of coconut butter in a bowl of hot water (stir to soften)
  8. Take the peanut butter out of the fridge to soften up
  9. To assemble dipped bananas
  10. Working quickly one banana at a time, dip one banana into the jar of peanut butter (then using a knife or spatula spread it evenly all around)
  11. Then sprinkle with desired toppings
  12. Place back onto the baking sheet
  13. Dip another other banana into the chocolate sauce and working quickly sprinkle with desired toppings
  14. For the drizzle
  15. Using a small zip top bag, put a few tablespoons of peanut butter, chocolate sauce, and coconut butter in their own zip top bags.
  16. Cut a small hole in the bottom corner in each of the bags and use it as a piping bag to drizzle on the bananas. (you can do this right after dipping them in the sauces, or you can choose to quicly freeze them again before drizzling)
  17. *It's important to work quickly otherwise the chocolate sauce or peanut butter freezes up quickly on the frozen banana making it difficult for the sprinkled toppings to stick
