20 Minute, Dairy Free Creamy Broccoli Soup

I love broccoli, and when it’s on sale I just can’t stop myself from buying more than one head or crown! But I’m dang sure to put them to good use at dinner time! Here’s my favourite quick and easy way to use broccoli to make a dairy free yet creamy broccoli soup that’s super simple, super quick, and only has 8 ingredients! Perfect for a night when you need a quick and warm dinner recipe in a snap. Oh and one more thing – it’s easy on your wallet! And the best part: it has extra fiber and protein with a a secrect ingredient I bet you would never have guessed if you weren’t the one cooking it!

Ingredients
2 heads of broccoli (they are usually sold banded together in the store)
1 medium white or yellow onion chopped
2 stocks celery chopped
2 cloves of garlic chopped
3 cups water
4 cups chicken stock or vegetable stock
1 can white navy beans or canelli beans
Salt & pepper to taste

Directions

1.In a large pot, add 3 cups of water, and place steamer basket on top with broccoli florets,
Steam broccoli until tender, about 10-15 minutes
2.Meanwhile, sauté chopped onion, garlic and celery until onion is translucent and celery is almost cooked through.
3.Carefully remove steamer basket from pot, and dump the broccoli into the steam water.
Add 4 cups of stock, white navy beans, onion garlic and celery mixture and season with salt and pepper
Bring to a boil, and simmer for 10 minutes.
Transfer to a blender to puree until smooth, or use a hand blender.

Enjoy with a side salad or crusty bread. (or shredded cheddar cheese if you’re like my hubby and daughter!)
