Leftover Lunch Quesadillas

As you probably know, I’m a huge meal planner, however when it comes to lunches when I am home, it’s usually not planned and my quick lunch usually consists of leftovers on a salad. However having a toddler at home two days a week means leftovers on a salad most likely isn’t going to cut it. So when she’s home, lunches gotta’ be not only quick but they need to be interesting.

 

As I opened the fridge today, all I had was a little bit of leftover BBQ chicken, and some corn I cut from the cob from the previous nights dinner. We also happened to have multigrain tortilla wraps and mozza cheese in the house. So I turned these leftovers into a cheesy chicken and corn quesadilla. Which was so quick and yummy! Chopping up the chicken made it go further than I thought, and I even have more leftover for another serving or two. Maybe tomorrows lunch!

 

Leftover Lunch Quesadillas

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients

  • whole grain tortilla
  • chopped or shredded leftover chicken
  • corn kernels
  • shredded mozzarella cheese

Instructions

  1. Heat a dry pan on the stove
  2. On a whole grain tortilla,top half of it with some shredded cheese, then chopped chicken and corn, then top again with a little more cheese.
  3. Fold the tortilla over, and place on the heated pan for a couple of minutes of each side until tortilla sides are crispy and cheese is melted
  4. Cut into slices with a knife or pizza cutter
  5. Enjoy plain or with sour cream, mashed avocado or salsa.
  6. Feel free to use any leftover protein or veggies you have at home for your easy satisfying lunch, or dinner!
