Quinoa Mint Salad

I love this salad!! The crunchy celery and apple, the minty freshness and the sweet craisins, let’s not forget the high protein content from the quinoa. It makes a great side salad for any backyard bbq or party.

Ingredients:
2 cups cooked quinoa
1 package fresh mint minced finely (about 1 cup)
1 1/4 cup minced celery
1 cup craisins (dried cranberries)
1 Granny Smith apple minced
Juice of ½ lemon

Method:
1. Mince Granny Smith apple and mix well with lemon juice.(This keeps the apple from browning.) If you’re using a big apple, you may need to use the juice of a whole lemon.
2. Mince celery and mint
3. Mix all ingredients together, chill and enjoy
