Summer Strawberry Crumble

What to do with all the summer strawberries?!

We’ve been picking them at our local strawberry patch and they’ve been so amazingly yummy. The berries have been so big that they’re quick to pick, but once we get them home I’m Googling all over the place for recipes to make to use them all up!

Total Hollywood problem I know!

Here’s a few of the things that we make with fresh picked strawberries  (click for the recipes)

And finally, the newest recipe and treat that the family is loving this summer is this strawberry crumble. Kinda like apple crumble, but without the apples (We’ll save that for autumn!)

Here’s how to make this Summertime Strawberry Crumble.

Ingredients :

  • 3-4 cups washed and quartered strawberries
  • 1Tbsp lemon juice
  • 1Tbsp arrowroot flour
  • 1 Tbsp coconut sugar

*Crumble Topping:

  • ½ cup rolled oats
  • ½ cup almond flour
  • ½ cup unsweetened shredded coconut
  • 3Tbsp coconut sugar
  • 3Tbsp butter cut into small cubes
  • 1 tsp cinnamon
  • Pinch nutmeg

Instructions:

  • Preheat oven to 375 degrees
  • In an 8×8 baking dish add strawberries and toss with lemon juice, sugar and arrowroot flour
  • In a small bowl mix the crumble topping ingredients, and using a pastry cutter cut the butter into the dry ingredients, or just get your fingers in there and smush up the butter mixing it in with the crumble ingredients until all the hard butter bits are no longer. (or if your crunched for time, just melt the butter and mix together quickly!)
  • Sprinkle the crumble topping onto the strawberries and bake for 30 minutes.
  • Enjoy alone or with a side of vanilla ice cream, or even some homemade whipped coconut cream.

*The first time I made this recipe I used only ¼ cup oats, almond flour and coconut but I found it wasn’t enough of the crumble, and for me the crumble makes this recipe! So if you’re not as into the crumble as I am, then you could try using only ¼ cup for those 3 ingredients.
